Summer Recipes That Are Easy To Make With Your Children

Summer holidays are a great chance to get cooking with your little ones. These delicious recipes are perfect for getting little hands into the kitchen and helping out.

Caprese Salad

 

This is a classic Italian salad or side dish. It’s super easy and tastes amazing.

Ingredients

  • 8 ripe plum tomatoes
  • 2 balls of mozzarella
  • Basil leaves
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of balsamic vinegar

 

Method

  1. Slice the tomatoes into even slices.
  2. Slice the mozzarella into slices roughly the same size as the tomatoes.
  3. Arrange the slices on a platter, alternating the tomato and mozzarella.
  4. Sprinkle with basil leaves.
  5. Season with salt and pepper.
  6. Drizzle with olive oil and vinegar.
  7. Serve.

 

DIY Pesto Pasta

 

This DIY pesto pasta is so easily customisable to your own taste. It’s also a delicious meal option during the warmer months. This recipe serves 6.

Ingredients

  • 400 grams of pasta
  • Three tablespoons of olive oil
  • 50 grams of pine nuts
  • Five tablespoons of pesto
  • Ten large basil leaves
  • Half a lemon, juiced and zested
  • 50 grams of parmesan
  • Halved cherry tomatoes
  • Sweetcorn
  • Peas
  • Rocket

 

Method

  1. Cook the pasta, drain and toss in one tablespoon of olive oil. Set aside to cool, but make sure to toss every so often.
  2. Toast the pine nuts in a dry frying pan on a low heat. Move them constantly. Toast for four or five minutes until browned.
  3. When the pasta has cooled, stir in the pesto, toasted pine nuts, oil, basil, lemon juice and zest.
  4. Serve the pasta in a large bowl, with all other veg in serving bowls.
  5. Build your own pasta by choosing which veg you want in your dish. Scatter with parmesan.

 

Sticky Pork Lettuce Tacos

 

These sticky pork lettuce tacos are a great dinner idea, and so easy to make that even little children can find a job to do.

Ingredients

  • Two tablespoons of soy sauce
  • Two tablespoons of honey
  • Two tablespoons of brown sugar
  • A pinch of cinnamon
  • A pinch of five spice
  • Four thinly cut pork loins
  • One carrot, sliced into matchsticks
  • One lime, juiced
  • A pinch of golden caster sugar
  • One tablespoon of rapeseed oil
  • Half a cucumber, sliced into matchsticks
  • 16 soft lettuce leaves
  • Sweet chilli sauce to serve

 

Method

  1. Make the marinade by mixing the soy sauce, honey, brown sugar, spices, and a tablespoon of water.
  2. Put the pork in a bowl and pour the marinade over.
  3. Make sure the pork is well coated and leave to marinate for at least half an hour.
  4. Mix the carrot with the caster sugar and lime juice.
  5. Grill the pork for four minutes on each side. Once it is cooked, cut into strips.
  6. Put the lettuce leaves on a serving board and divide the pork between them.
  7. Add some carrot and cucumber into each lettuce leaf.
  8. Roll the lettuce to make a taco or a wrap.
  9. Serve with sweet chilli sauce on the side.
